CHEMISTRY OF FIXED OILS

Chemically fixed oils are glycerides of fatty acids.
General formula


CH2-O-CO -R
CH -O-CO-R’
CH2-O-CO-R’’
Triglyceride

CH2-O-CO-R
CH -OH
CH2-OH
Mono-glyceride
CH2-O-CO-R
CH-O-CO-R’
CH2-OH
Di-glyceride

1. If R, R’, R’’ are same = simple glycerides results.
2. If R, R’, R’’ are different = a mixed glyceride results.
3. The glycerides of unsaturated fatty acids are liquid.
4. The glycerides of saturated fatty acids are solid.
